Vaghareli Khichdi is one of the best comfort foods for Gujju kids. This is the equivalent of chicken noodle soup for when you’re sick, when you’re sad, when you’re hungry…pretty much everything. My mom made this with extra peanuts all the time because it was my favorite, and she never messed with cashews or raisins because that’s a cardinal sin in my house. Ultimately, when I want something easy and tasty this is a dish I often come to because I can cook everything in one pot and be done with it. I also am not going to lie, I love when it sticks to the bottom of the pot a little and gets crispy… I know, I know it’s so weird. Just try it before you knock it!
Vaghareli Khichdi
Snuggle up with a bowl of khichdi. There is nothing better! It is served piping hot with a lot of spices. It is the perfect dish for the winter or fall, it'll warm your heart in the chilly weather. Add a little pad of butter or ghee and you're good to go!

Ingredients
- 2 red potatoes diced
- 1/2 onion diced
- 1 carrot diced
- 1/2 eggplant diced diced
- 1 1/2 stems of curry leaves
- 1 Cinnamon stick
- 1 cup frozen lilva
- 3 cups water
- 1 cup long grain rice rinsed
- 1/2 cup mung dal rinsed
- 1/2 cup peanuts
- 2 tbsp ghee
- 1 tsp turmeric
- 1 tbsp Green chili paste
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 tsp salt
- 1/4 tsp hing
Instructions
- Rinse rice and dal 2-3 times. Add curry leaves to the rice and dal.
- Melt ghee in a large pressure cooker or instant pot. Add the whole spices and ginger or garlic paste. Sauteé for 20-30 seconds. Add rice mixture.
- Add all of your vegetables and the remaining ingredients. Pressure cook for 20 minutes.
