Spicy Pizza Dough

Almost everyone I know loves pizza, what better time to learn how to make it than quarantine?! This crust is spicy and crunchy, it hits all the right notes when it comes to pizza. It is a yeasted dough which I know makes some folks nervous. However, this dough utilizes instant yeast which lets you avoid that first proofing stage. The base of this recipe is from @SugarSpunRun I have made a bunch of adjustments and the below recipe is for 3 pizzas with a thinner crust or 2 with a thicker base. Nearly all of the spices are optional but these are just the ones I felt like adding. I use a random combination of them all of the time when making pizza depending on my mood. Ingredients:

  • 3-4 c. all purpose flour
  • 3 c. bread flour
  • 3 c. warm water
  • 2 tbsp. instant yeast
  • 1 tbsp. sugar
  • 1 tbsp. honey
  • 1 tbsp. salt
  • 1 tbsp. olive oil
  • 1 tbsp. lal mirch
  • 1 tbsp. garlic powder
  • 1 tbsp. Italian seasoning
  • 1 tsp. coriander powder
  • 1 tsp. onion powder
  • 1 tsp. black pepper
  • 1 tsp. red pepper flakes

Method:

  1. In a stand mixer fit with a dough hook, mix together bread flour, oil, yeast, warm water, and all the spices.
  1. Slowly add in all purpose flour until the dough starts to pull away from the sides of the bowl.

  1. When you have a soft, supple dough put it in a large, clean, oiled bowl and cover with plastic wrap. Let it proof on your countertop for 1-2 hours or until doubled in size.
  1. Deflate the dough and start to roll out onto floured surface into desired shape. Prick the dough with a fork and brush oil on the top for browning.
  1. Bake at 400° until the bottom is browned and crisp. The top should be slightly browned. Top with your toppings of choice and pop it back into the oven at 500° to melt the cheese.
