Gluten Free Chocolate Peanut Butter Banana Bread
Banana bread is a favorite of mine. In The Midnight Kitchen made this wonderful recipe which is a hybrid of chocolate cake and banana bread. I first saw Zorah’s work through the Foodtography School Instagram page which featured her recipes. After, I started to follow her to get more insight into her photography and her gluten free recipes. This recipe was fairly easy and didn’t have any fancy ingredients. I made some minor adjustments to reduce the diary in this recipe and also balance flavors in a different way. Method I put this loaf together the traditional way, you can refer to my chai loaf for general instructions. I beat…

Vegan Gluten Free Lemon Bars
I am a huge fan of lemon desserts. Something about the tart and sweet combo makes me swoon. I was craving my Vegan Lemon Ricotta Cookies, but I didn’t have any vegan ricotta in the house. Needless to say the craving was real. After searching for eggless recipes, I found two, one from Nora Cooks, and another from Minimalist Baker. I sort of mashed the two of them into one recipe based off of ingredients I had and the result was pretty great! I feel like the filling alone would be good on anything. It might be put to use on pancakes or crepes for that yummy sour zing! Method…

Gluten Free and Vegan Cinnamon Roll Pancakes
Pancakes are everyones favorite weekend breakfast. My favorite pancakes in the world are the limited edition Cinn-a-Stack pancakes from IHOP. I get so sad when they disappear off the menu. The cinnamon topping is so tasty and I could probably eat it separately in a bowl. For the purposes of the recipe I put it in a squirt bottle to get that signature swirl, but honestly you could just spread it over a cooked pancake with the back of a spoon to double down on that lovely velvety, sticky, sweet cinnamon flavor. Method The methodology is the same as regular pancakes. The kicker is that I make it with gluten…

Spicy and Sweet Tofu
Tofu is every vegetarian/vegan’s big hurdle. It can be bland and everyone tells you “it tastes great if you cook it right”. I’ll tell ya what… I didn’t think that rule applied to me. I was so so wrong. My dad was looking for better ways to get more protein and we bit the bullet and tried a bunch of tofu recipes. I made this tofu as a side dish that can be combined with a bunch of different things. You can eat it mixed into some rice, you can have it as a side with a serving of noodles, you can stir in some vegetables and make it a…

Desi Chex Mix
Chex Mix is one of those all time party snacks that become popular right around Christmas time. I’m not sure where the tradition really starts but I’m not complaining! Since I have been trying to eat less dairy and gluten I wanted to make a unique mix that is completely vegan and gluten-free. To achieve this, I utilized Rice Chex and Corn Chex. I wanted to make something that is a hybrid between the Classic Chex Mix you all know and love, and the cereal chevdo I grew up with. I kept the classic elements of the Worcestershire sauce and pretzels, and I added the Indian elements of traditional tempering…

Masala Popcorn
Popcorn is a sacred tradition in my house. There is one version that is my go-to in a pinch, and one for when I have some time to sit and prepare. This recipe is for my super quick popcorn fix. I typically reserve this popcorn for when my sister has decided on an impromptu movie and she’s already reaching for the remote. The spice mix is very simple and utilizes a lot of Indian spices. I also go heavy handed with the sugar rather than the salt and it might seems counterintuitive but trust me on the sugar ration. it is definitely correct. I also decided to go ahead and…

Vegan Creamy Garlic Pasta
Earlier in the week, I showed y’all how to make marinara sauce, what happens when you’re all out though?! No worries I am here to save you with my easy vegan pantry pasta! This pasta combines a lot of ingredients you probably already have around your house. You don’t really need to have anything else besides some sort of fat (in my case I used Country Crock Plant Butter), a few veggies, garlic, chili flake, nutritional yeast and cashews. The sauce is essentially constructed with the help of pasta water! I am trying to add more vegan and gluten-free elements to my diet. Pantry pasta can be riffed on in…

Slow Simmered Homemade Marinara
Marinara sauce is a useful pantry staple. I honestly always used the jarred stuff, but recently my dad brought home 3 pounds of tomatoes and couldn’t figure out what to do with it! I have a dad that loves to buy things in excess “just in case we need it”. Eventually, I come up with hacks like these to use up the excess. If you find yourself with an excess amount of tomatoes I highly recommend making this marinara sauce. Alternatively the best usage of extra tomatoes in my opinion is a paneer gravy. I make a bunch of house gravy like the one from my Paneer Butter Masala recipe,…

Garlic Herb Focaccia
Bread making is a skillset that I will be taking with me from 2020 into this new year. I have made pita, focaccia, naan, and took a failed stab at sourdough. Maybe sourdough starter and I were never meant to be. I might need to to work harder on our relationship, who knows. What I am excelling at are the quick bread recipes. This brings me to this focaccia recipe. My family doesn’t believe in the simplicity of just flour, salt, yeast, and water. Everything has to be a little spicy with specks of color and flavor that you can see. This bread turned out so nice and garlicky. It…

Spicy Rigatoni Rosa
As far as chains go, I don’t really discriminate. I’m not going to lie I love pretty much everything, anywhere. I feel like there is nothing more comforting than a big plate of pasta. One of my favorite chains is Buca di Beppo. The Spicy Chicken Rigatoni (minus the chicken) is one of my favorite dishes of ALL TIME. I can probably finish a whole plate of garlic bread too. My family can be quite picky with non-Indian dishes so the Spicy Rigatoni is a rare dish that everyone loves. This is my take on making a copy cat. There are several online, I have taken the crux of it…
