Gluten Free Chocolate Peanut Butter Banana Bread

Banana bread is a favorite of mine. In The Midnight Kitchen made this wonderful recipe which is a hybrid of chocolate cake and banana bread. I first saw Zorah’s work through the Foodtography School Instagram page which featured her recipes. After, I started to follow her to get more insight into her photography and her gluten free recipes. This recipe was fairly easy and didn’t have any fancy ingredients. I made some minor adjustments to reduce the diary in this recipe and also balance flavors in a different way. Method I put this loaf together the traditional way, you can refer to my chai loaf for general instructions. I beat…

    Vegan Gluten Free Lemon Bars

I am a huge fan of lemon desserts. Something about the tart and sweet combo makes me swoon. I was craving my Vegan Lemon Ricotta Cookies, but I didn’t have any vegan ricotta in the house. Needless to say the craving was real. After searching for eggless recipes, I found two, one from Nora Cooks, and another from Minimalist Baker. I sort of mashed the two of them into one recipe based off of ingredients I had and the result was pretty great! I feel like the filling alone would be good on anything. It might be put to use on pancakes or crepes for that yummy sour zing! Method…

Gluten Free and Vegan Cinnamon Roll Pancakes

Pancakes are everyones favorite weekend breakfast. My favorite pancakes in the world are the limited edition Cinn-a-Stack pancakes from IHOP. I get so sad when they disappear off the menu. The cinnamon topping is so tasty and I could probably eat it separately in a bowl. For the purposes of the recipe I put it in a squirt bottle to get that signature swirl, but honestly you could just spread it over a cooked pancake with the back of a spoon to double down on that lovely velvety, sticky, sweet cinnamon flavor. Method The methodology is the same as regular pancakes. The kicker is that I make it with gluten…

    Spicy and Sweet Tofu

Tofu is every vegetarian/vegan’s big hurdle. It can be bland and everyone tells you “it tastes great if you cook it right”. I’ll tell ya what… I didn’t think that rule applied to me. I was so so wrong. My dad was looking for better ways to get more protein and we bit the bullet and tried a bunch of tofu recipes. I made this tofu as a side dish that can be combined with a bunch of different things. You can eat it mixed into some rice, you can have it as a side with a serving of noodles, you can stir in some vegetables and make it a…

    Masala Popcorn

Popcorn is a sacred tradition in my house. There is one version that is my go-to in a pinch, and one for when I have some time to sit and prepare. This recipe is for my super quick popcorn fix. I typically reserve this popcorn for when my sister has decided on an impromptu movie and she’s already reaching for the remote. The spice mix is very simple and utilizes a lot of Indian spices. I also go heavy handed with the sugar rather than the salt and it might seems counterintuitive but trust me on the sugar ration. it is definitely correct. I also decided to go ahead and…

Palak Paneer (Spinach and Indian Cottage Cheese Curry)

So I will be honest, before I made this dish I had never tried palak paneer before. My dad and cousin are also not fans AT ALL. Until one day my parents came home with a whopping 4 pounds of baby spinach for no reason whatsoever. In a panic I decided to try and learn how to make this dish. After adding in my own twists to the gravy this recipe was born. My family loves this dish (including the picky eaters) and now we have added it into our quarantine rotation! It is a COVID miracle! This dish is a great way to get more leafy greens into your…

    Chana Masala

Chana Masala is the king of meal prep dishes for me. I feel like I can use it up in pretty much anything! Similar to the Chickpea Tinga Tacos, you can use this in Samosa Chaat or a pita pocket the next day, even just plain with rice is delicious! This is actually quite easy to make, however it does take a little while to make the gravy. The gravy is super freezer-friendly so I recommend making a huge batch of the gravy and freezing it! Even better, this dish is vegan and gluten-free! The gravy would be great with any types of veggies or protein. This is one of…

    Summertime Veggie Pasta

Happy Thursday Everyone! Today is all about a comfort meal. We are almost at the end of the workweek and, for me, the perfect Friday is me coming home and whipping up a nice hot meal and flipping on a movie. (Harry Potter is my series of choice.) This recipe is super flexible for dietary needs. It can easily be made vegan by swapping out the cream cheese for a vegan alternative and omitting the heavy whipping cream. Also, I made mine gluten-free by subbing out the pasta for a gluten-free/vegan option, Zoodles would be great too! This is a great way to use up a bunch of your veggies…
