    Earlier in the week, I showed y’all how to make marinara sauce, what happens when you’re all out though?! No worries I am here to save you with my easy vegan pantry pasta! This pasta combines a lot of ingredients you probably already have around your house. You don’t really need to have anything else besides some sort of fat (in my case I used Country Crock Plant Butter), a few veggies, garlic, chili flake, nutritional yeast and cashews.     Mushroom Stroganoff

    Mushroom Stroganoff is an easy weeknight meal! My roommate from college would always order a mushroom stroganoff when we used to go out to dinner at our favorite pasta spot. At the time I was a mushroom naysayer but I think I am recently on the way to converting. I looked up the classic elements of a stroganoff: wine, roux, and dairy! It came together fairly quick and was a crowd-pleaser right off the bat. I used rigatoni pasta instead of the traditional egg noodles to keep this recipe eggless as well. It is hearty and satisfying, you might not miss the meat!

    Spinach and Ricotta Stuffed Shells

    Nothing says comfort food like a giant casserole dish of stuffed shells. Some days I just want to go all out with a hot, cheesy, rich meal and this is a one-way ticket to cheese heaven. This meal isn’t super spicy and it is extremely kid friendly. I found ways to incorporate more vegetables in the filling to make the meal heartier. I paired this with garlic toast and sautéed asparagus for a full meal! I definitely recommend making a big plate of this and either freezing the rest or using it for lunch the next day.     Summertime Veggie Pasta

    Happy Thursday Everyone! Today is all about a comfort meal. We are almost at the end of the workweek and, for me, the perfect Friday is me coming home and whipping up a nice hot meal and flipping on a movie. (Harry Potter is my series of choice.) This recipe is super flexible for dietary needs. It can easily be made vegan by swapping out the cream cheese for a vegan alternative and omitting the heavy whipping cream.
