Chana Masala is the king of meal prep dishes for me. I feel like I can use it up in pretty much anything! Similar to the Chickpea Tinga Tacos, you can use this in Samosa Chaat or a pita pocket the next day, even just plain with rice is delicious! This is actually quite easy to make, however it does take a little while to make the gravy. The gravy is super freezer-friendly so I recommend making a huge batch of the gravy and freezing it! Summertime Veggie Pasta
Happy Thursday Everyone! Today is all about a comfort meal. We are almost at the end of the workweek and, for me, the perfect Friday is me coming home and whipping up a nice hot meal and flipping on a movie. (Harry Potter is my series of choice.) This recipe is super flexible for dietary needs. It can easily be made vegan by swapping out the cream cheese for a vegan alternative and omitting the heavy whipping cream. Happy Taco Tuesday! If your family is anything like mine we require tacos at least once a week. Being vegetarian, it can sometimes be difficult to find a filling that is satisfying and tasty at the same time. This recipe is from the Hello Fresh Cookbook, however, I have made a few updates per my family’s taste. Homemade Veggie Burgers
It is peak cookout season! As the summer months are winding down I thought I would share my veggie burgers recipe. This recipe can be made easily vegan by subbing out the breadcrumbs for vegan ones or using various flours (I recommend rice flour) to dry out the patty!
