Khata Puda are lacy, tart rice flour pancakes similar to a Dosa. The batter is fermented overnight to provide you that deliciously savory flavor. These are incredibly toddler friendly and are a great way to use up extra yogurt!
Whisk all of the ingredients in a medium mixing bowl until you get a smooth batter (similar to a pancake) and loosely cover. Place the bowl in a warm area overnight (roughly 12-36 hours), maybe an oven with the light on or out on the countertop.
Spray a nonstick pan with cooking spray on medium-high heat. Pour a ladle of the batter in the pan, it should be lacy and bubbly. Once you get a nice brown color on one end (roughly 3-5 minutes) flip and cook on the other side for a minute or so.
Notes
If you want more of a tart flavor feel free to add fruit salt, this will also help get a bubbly batter!
