I am a huge fan of lemon desserts. Something about the tart and sweet combo makes me swoon. I was craving my Vegan Lemon Ricotta Cookies, but I didn’t have any vegan ricotta in the house. Pancakes are everyones favorite weekend breakfast. My favorite pancakes in the world are the limited edition Cinn-a-Stack pancakes from IHOP. I get so sad when they disappear off the menu. The cinnamon topping is so tasty and I could probably eat it separately in a bowl. Chex Mix is one of those all time party snacks that become popular right around Christmas time. I’m not sure where the tradition really starts but I’m not complaining! Bataka Vada is my dad’s favorite desi fried food. This with fruit salad is every Gujarati dad’s dream for lunch. It is probably the one food that they could eat in every meal of the day. My masi has the best recipe for these (shout out to Rita Masi!) but when she is not here us amateurs have to fend for ourselves. Air Fryer Gobi Manchurian
Want manchurian but don’t want to deep fry the cauliflower? I present to you Air Fryer Gobi Manchurian. This gravy is FIRE. I would highly recommend the same gravy for a variety of vegetables and protein. You could easily use this as an appetizer or as a side dish. Chana Masala is the king of meal prep dishes for me. I feel like I can use it up in pretty much anything! Similar to the Chickpea Tinga Tacos, you can use this in Samosa Chaat or a pita pocket the next day, even just plain with rice is delicious!
